Restaurant visit fuels catering staff’s Michelin-starred ambitions

A visit to a two-starred London restaurant run by Michel Roux Jr has inspired catering staff from neurological care specialists, PJ Care.

Six members staff from the Milton Keynes-based company sampled a seven-course tasting menu of the restaurant’s signature modern French cuisine at La Gavroche.

PJ Care chairman Neil Russell, who came up with the idea, said: “I have a very talented, hard-working team and I push them to produce food of the very highest standards. Our residents deserve good quality, flavourful food. Mealtimes can be the highlight of the day for people with limited abilities and we aim to make them as good as we possibly can.

“I set our teams what we call ‘ridiculous targets’; targets set well in the future that will be very challenging, possibly unachievable, but working towards them will ensure constant improvement. Our catering manager has a background in Michelin starred restaurants, so we agreed that striving towards being the first care provider to achieve a Michelin star was an ambition we should aim for. As well as rewarding my team’s dedication, this meal also served as inspiration towards that goal.”

Catering manager Darren Klein said: “This was a once in a lifetime opportunity for us and we are so grateful to have had this experience. We were blown away with the attention to detail and the care taken with the service. The food was stunning; the intensity of the seasoning and flavour, with the cheese souffle being one of the standout dishes. Michel Roux Jr was so supportive and was more than happy to give us hints and tips to follow our dreams.”
