Care home chefs take part in culinary masterclass

Chefs from Runwood Homes and Sanders Senior Living took part in a fish-themed masterclass at Billingsgate market last month.

The event was hosted by TV chef and chief executive of Billingsgate Seafood School CJ Jackson and sponsored by kitchen equipment company Robot-Coupe UK. It started at 5.30am when the chefs toured Billingsgate Fish Market in east London.

The team learned how to prepare and fillet a wide range of fish purchased from the market. They were asked to prepare a fresh batter using an array of ingredients, resulting in katsu curry batter, gram flour batter, and the winning beer and chilli batter.

The nine chefs were then asked to create a main course dish in 40 minutes, using one of the fish that they had bought from the market, plus five other ingredients. The overall winner was Michael Kirwan from Redbond Lodge care home in Essex, who cooked a brown butter cod with garlic roast potato bites and a pea, dill and lemon puree.

Chris Williams, group hospitality and catering manager at Runwood Homes, said: “It was outstanding to see all our participants’ hard work and dedication at this year’s culinary masterclass and I want to congratulate all our winners for their achievements.”
